Yesterday was one of my better food days but that's probably because I stopped in at Planet Organic at Saanich Center. I decided to get some organic vegetables and fruits including KALE! It turns out to be amazing and a new breathe of fresh air for me and greens.
It all started out with a little deli tasting. I got a kale salad and tried a "lentil cake" that had mango chutney with it. Both were amazing! The lentil cake had a bit of a spice to it but the mango completmented it so well. I also saw they had a spinach based "cake" too. Those run for about $1.60 each or so and the kale salad tub was about $2.90 I think. The kale salad was great, too. it had kale, carrots, red cabbage, some special oil I forget but also balsamic vinegar and sunflower seeds!
Inspired, I decided to make my own kale salad. My salad had blanched and cold shocked kale, shredded carrots, chick peas, raw sunflower seeds and fresh red beets. The dressing was just olive oil and balsamic vinegar. As well, I got some Mediterranean Veggie Burgers that turned out amazing. They have such a great flavour to them and they weren't that high in fat or calories! To go with that I got whole wheat buns, kale and tomatoes inside and then I made some mashed potatoes. I also purchased some Bob's Red Mill 10 Gran Pancake Mix which is whole wheat and tastes great! I added some frozen blueberries to the batter and grilled those up. On top I made a yogurt mixture with probably 3 parts Liberte 0% Fat Plain Greek Yogurt and then 1 part 0$ Fat Eat Right Strawberry Yogurt. I mixed that up on top of my pancakes and then sliced some fresh, organic banana to go with it. It turned out really filling but felt great to be eating pancakes and still be getting that sweet without the guilt! Check that out:

So, all in all a pretty successful couple of days for food. It is a lingering issue though that I might be lactose intolerant. All this increase in dairy (in particular 2-3 glasses of milk per day) has really got my stomach in knots so, next weekend I'm heading to get a hydrogen breathe test for lactose intolerance. That should be interesting. For now, I'm laying off the dairy (mostly just the milk and cheese). The greek yogurt seems to be okay for now.
Sorry for all the food in the blogs but currently all I can control right now is the food. No actual field hockey until June probably but I am heading off with the girls to Santiago, Chile March 29-April 12, 2011 and that is coming around the corner real fast! As well, I DO get to go to the Champions Challenge II competition in Vienna, Austria May 1-15th. I'm heading to both Chile and Austria as a "video technician" which fits RIGHT into my area of interest. So, I am very excited to still help out the team and get to watch the games and be with the girls.
I can't wait!! For now, it's one more week of school... an exam and a lab while in Chile, one more exam when I get home and then I am done. I can become "Alexandra J. Lee B.Sc. Biochemistry"... Interesting concept...
